INGREDIENTS:

2 large chicken breasts
5-6 cloves garlic (minced)
2 cloves garlic (crushed)
1 medium onion
1/2 cup chicken stock or water 
1 tsp like juice 
1/2 cup heavy cream (sub fresh cream) 
Olive oil
Butter 
1tsp dried oregano
1tsp dried parsley 
Salt and pepper (as needed)
1 chicken stock cube (if using water)




•you are going to start with thin chicken breasts.for a faster prep-time 

•We use a combination of oil and butter to fry the chicken for the best golden browned results and delicious flavour.

•Cook the sauce in same pan as the chicken.dont get rid of any chicken bits from the pan as they add tons of flavour into the sauce!

HOW TO MAKE SAUCE:

After the chicken has been browned on both sides and removed to a plate,add in. A drizzle more oil and sauteed the shallot and garlic.

Add in the chicken stock and use a wooden spoon to really scrape the bottom of the pan This loosens up any browned bits and incorporates that flavour into the sauce.

Add in the cream and seasonings,stirring well .add in the cream and butter and your sauce is complete!

This pan sauce method can be used to make just about any pan sauce you want!

FAQ:
•Why lime juice?
As wine is not used in this recipe,lime juice is added for acidity (sourness).otherwise the sauce might seem too rich.

• How to know if chicken is cooked?
Poke a fork at the thickest part.it it enters easily and the meat looks white,it's done 
OR 
Use a food thermometer at the thickest part.when it reaches 165°F internal temperature,it's done 

•What else can be added to the dish?
Mushrooms,broccoli,bacon,spinach and parmesan cheese can also be added for additional flavour 

•What to pair with the dish?
pasta,steamed veggies,mashed potatoes,rice,couscous or crusty bread.

•When to add salt to the sauce? 
Add salt towards the end as stock/stock chives have added salt.i did not find the need to add more salt.

TIPS:

•Chicken stock can be substituted with white wine as well omit lime juice if using white wine 
•The entire sauce Needs to be cooked on low flame so as to prevent it from splitting 
•Reduce the liquid before adding cream
•Add 1/4 cup parmesan cheese to add more flavour.
